One Pan Van Tacos
I love Aldi. There. I said it. I am a woman who loves good deals, and I find the coolest things at Aldi.
My favorite/easy meal is a taco dinner.
Aldi’s meat section will have marinated meat containers - often times with stickers reading “tacos tacos tacos” - that are easy to pass over. I have bought the Pastor marinaded pork as well as the Citrus marinaded chicken. I prefer pastor, but both are awesome. Both are under $5 for a TON of meat.
I also buy raw tortillas. These, specifically. “La Abuela” ready to cook tortillas are $3 for a pack of 20. They are perishable, but good for breakfast tacos, lunch tacos, and dinner tacos. We have no problem going through them pretty quickly.
Cotija cheese is an added bonus that lasts forever in the fridge and is such a tasty addition. So is salsa verde. A little squeeze of lime, and VOILA.
I’ll cook up the container of meat and store it in the fridge. The same pan that I cook the tortilla on, I scoot it over and add some of the meat to heat it up.
Add any toppings you like, and you’ve got your own little van fiesta.
The kid loves them, and we can eat on this for a few days. For ~$10 all in, we eat like kings for 2-3 days.
Breakfast? Throw an egg in! Lunch? Make a quesadilla! Dinner? Tacos again!
